Tomato Pie

Pies are one of my favorite dishes for easy weekday dinners. There are countless variations with different ingredients and crusts. This delicious tomato tart features a puff pastry crust, making it wonderfully soft yet crispy. Additionally, tomatoes just go with everything, especially this tart!

Tomato Pie

Ingredients

  • 250 g cherry tomatoes
  • 150 g bacon
  • 225 g cottage cheese
  • 3 eggs
  • Fresh thyme
  • 1 tbsp balsamic vinegar
  • 3 cloves garlic
  • 1 package puff pastry

Instructions

  1. Fry the bacon well in a pan
  2. Cut the tomatoes in half, chop the garlic, and sauté them in the pan with the bacon
  3. Add balsamic vinegar and fresh thyme
  4. Whisk cottage cheese with eggs and salt
  5. Roll out the puff pastry and press it into a 24 cm (9.5 inch) diameter tart pan
  6. Pre-bake the crust for 15 minutes at 200°C (392°F) conventional oven
  7. Spread the tomato mixture on the pre-baked crust and pour the egg mixture over
  8. Bake the tart for an additional 30 minutes
