Tarte Tatin with Caramelized Onions

Tarte Tatin with caramelized onions, or Tarte Tatin Aux Oignons, is a delicate French tart with sweet onions made in the upside-down manner where the crust is placed over the filling. Here, I have used 8 small molds, but you can easily make it in one large tart pan, in which case only one roll of puff pastry is needed. Bon Appétit!

Tarte Tatin with Caramelized Onions

Ingredients

  • 2 rolls of puff pastry
  • 8 onions
  • 100 ml water
  • 150 g sugar
  • 80 g butter
  • 1 ½ tbsp balsamic vinegar
  • Thyme

Instructions

  1. Cut the puff pastry to fit your tart molds.
  2. Slice the onions into three or four crosswise slices.
  3. Boil water and sugar until it reaches about 180°C.
  4. Stir butter and balsamic vinegar into the hot sugar mixture.
  5. Distribute the caramel in the molds and place the onion slices on top.
  6. Press the puff pastry over the filling and down the sides so it envelops the filling.
  7. Prick the dough with a fork and bake the tarts at 180°C conventional oven for 25 - 30 minutes.
  8. Top the onion tarts with fresh thyme.
