Swedish Caramel Slices

Caramel slices are a delicious Christmas cookie reminiscent of Swedish chocolate slices. The caramel slices are super easy to make and have a lovely caramel flavor from the syrup. They are perfect for Christmas coziness and can be stored in a cookie tin for several weeks.

Swedish Caramel Slices

Ingredients

  • 150 g butter
  • 130 g sugar
  • 100 ml light syrup
  • 50 ml dark syrup
  • 300 g flour
  • 3 tsp vanilla sugar
  • 1 tsp baking soda
  • A pinch of salt
  • Pearl sugar

Instructions

  1. Whisk together butter, sugar, light syrup, and dark syrup.
  2. Mix flour, vanilla sugar, baking soda, and salt together and add it to the butter mixture.
  3. Knead the dough well and divide it into 4 equal parts.
  4. Roll each dough piece into an elongated rectangle about 0.5 cm thick and about 10 cm wide. Two dough pieces can fit on a baking sheet.
  5. Place them on a baking sheet with parchment paper and sprinkle with pearl sugar.
  6. Bake the cookies at 175°C (fan) for 10 minutes.
  7. Once the cookies are out of the oven, cut them lengthwise after a short time so each slice is about 5 cm long and 2 - 3 cm wide.
