Mix cornstarch, all-purpose flour, salt, and pepper in a bowl. Coat the chicken pieces well.
Oven: Preheat to 200°C fan. Place the chicken on a baking sheet with parchment paper and brush/spray lightly with oil. Bake for 20 - 25 minutes, turning halfway, until the pieces are crispy and cooked through.
Air fryer: Preheat to 190°C. Place the chicken in a single layer in the basket, spray lightly with oil. Cook for 20 - 25 minutes, shaking the basket occasionally.
Sauce
Combine soy sauce, sweet chili sauce, honey, brown sugar, vinegar, sesame oil, garlic, and ginger in a small saucepan
Heat over medium heat until the sauce bubbles and thickens slightly
Serving
When the chicken is done, pour the warm marinade into a large bowl. Add the crispy chicken pieces and toss quickly to coat all pieces with the sticky sauce.
Cook the rice
Sprinkle with toasted sesame seeds and spring onions, and serve immediately with rice and, for example, broccoli
