Spinach pie
Tarts are one of my favorite dishes for easy weekday dinners. There are countless variations with different ingredients and crusts. This delicious tomato tart has a puff pastry crust, which makes it deliciously soft yet crispy. Tomatoes also just go with everything, especially this tart!

Tart Dough
Crumble the cold butter into the flour and add water and salt, quickly gathering the dough together.
Press the dough into a 22 cm tart pan, prick the bottom with a fork, and let it rest in the refrigerator for 30 minutes.
Once rested, pre-bake the dough for 15 minutes at 200°C conventional oven.
Press the tart dough into a form, prick it with a fork, and pre-bake for 10–12 minutes at 200°C fan oven.
Filling
Thaw the spinach in a pot with a little water.
Mix cottage cheese, eggs, and spices together in a bowl.
Cut the red onions into thin wedges.
Combine the thawed spinach with the cheese mixture and spread over the pre-baked tart crust.
Place the red onions on the tart and bake for an additional 20–25 minutes until beautifully golden.
