Spinach pie

Tarts are one of my favorite dishes for easy weekday dinners. There are countless variations with different ingredients and crusts. This delicious tomato tart has a puff pastry crust, which makes it deliciously soft yet crispy. Tomatoes also just go with everything, especially this tart!

Ingredients

  • Tart Dough
  • 100 g butter
  • 175 g all-purpose flour
  • 1 tsp coarse salt
  • 100 ml water
  • Filling
  • 225 g frozen spinach
  • 2 large red onions
  • 250 g cottage cheese
  • 3 eggs
  • 2 tsp garlic powder
  • 2 tsp dried thyme
  • Salt and pepper

Instructions

  1. Tart Dough
  2. Crumble the cold butter into the flour and add water and salt, quickly gathering the dough together.
  3. Press the dough into a 22 cm tart pan, prick the bottom with a fork, and let it rest in the refrigerator for 30 minutes.
  4. Once rested, pre-bake the dough for 15 minutes at 200°C conventional oven.
  5. Press the tart dough into a form, prick it with a fork, and pre-bake for 10–12 minutes at 200°C fan oven.
  6. Filling
  7. Thaw the spinach in a pot with a little water.
  8. Mix cottage cheese, eggs, and spices together in a bowl.
  9. Cut the red onions into thin wedges.
  10. Combine the thawed spinach with the cheese mixture and spread over the pre-baked tart crust.
  11. Place the red onions on the tart and bake for an additional 20–25 minutes until beautifully golden.
