Spinach Pancakes with Chicken

These spinach pancakes with chicken are a delicious and colorful dish that combines crispy vegetables, juicy chicken, and a creamy garlic dressing. They are perfect as a light dinner or for a packed lunch.

Spinach Pancakes with Chicken

Ingredients

  • Spinach Pancakes
  • 300 ml milk
  • 3 eggs
  • 100 g fresh spinach
  • 150 g flour
  • 1 tsp coarse salt
  • Dressing
  • 200 g Greek yogurt
  • 3 cloves garlic
  • ½ organic lemon (zest and juice)
  • 1 tsp coarse salt
  • Freshly ground pepper
  • ½ tsp Dijon mustard
  • Filling
  • ½ pointed cabbage
  • 2 avocados
  • 250 g chicken
  • 1 tsp ground coriander
  • 2 tsp cumin
  • 30 g fresh spinach

Instructions

  1. Spinach Pancakes
  2. Blend all the ingredients for the pancakes.
  3. Heat a little butter in a pan over medium heat and let it melt.
  4. Pour the batter onto a pan (about 24 cm) and spread to the edges.
  5. Flip the pancake when it releases from the edges.
  6. Repeat with the remaining batter.
  7. Dressing
  8. Mix Greek yogurt with pressed garlic, lemon juice and zest, and the other ingredients.
  9. Filling
  10. Cut the chicken into strips and fry it in a pan until it colors.
  11. Add spices and continue frying.
  12. Finely slice the pointed cabbage and cut the avocado into slices.
  13. Distribute dressing, filling, and a little fresh spinach on the pancakes and roll them up.
