Rinse and boil the potatoes in lightly salted water until tender, then let them steam for a moment.
Spread the hot potatoes on the tray and gently flatten them with a fork or the bottom of a glass, so they crack slightly without falling apart completely.
Mix olive oil with pressed garlic, salt, and pepper.
Brush the potatoes with the mixture and sprinkle with rosemary and Grana Padano, then bake them at 220°C (fan) until crispy.
Feel free to sprinkle with fresh thyme or rosemary, and serve them warm as a side dish.
