Potato Soup

My potato soup recipe is super easy and quick to make. It's perfect for a cold autumn day. Serve it with your favorite toppings, such as rye bread croutons or toasted seeds.

Ingredients

  • 500 g potatoes
  • 3 onions
  • 3 cloves garlic
  • 750 ml vegetable broth
  • 200 ml cream
  • Salt and pepper

Instructions

  1. Cut the potatoes into rough cubes.
  2. Chop onions and garlic.
  3. Briefly sauté potatoes, onions, and garlic in a pot.
  4. Add broth and cook the soup until the potatoes are tender.
  5. Blend the soup with an immersion blender.
  6. Stir in cream and season with salt and pepper.
  7. Serve with fried bacon, crème fraîche, and bread.
