Mushroom Salad with Spinach and Parmesan

Mushroom salad with spinach and cheese is a salad with juiciness, acidity, and creaminess from the Parmesan cheese. It's delicious as a side dish to any meal.

Mushroom Salad with Spinach and Parmesan

Ingredients

  • 250 g mixed mushrooms
  • 1 shallot
  • 2 cloves garlic
  • 100 g fresh spinach
  • 1 organic lemon
  • 100 g Parmesan cheese

Instructions

  1. Heat a pan over medium heat with a little olive oil
  2. Chop the shallot and garlic and sauté in the pan
  3. Add sliced mushrooms and cook until golden
  4. Rinse spinach and cook until wilted with the mushrooms
  5. Season with salt and pepper
  6. Grate the zest of the lemon and add along with the juice of ½ lemon
  7. Arrange on a platter and shave plenty of cheese over
