Lime Tarts
These small lime tarts are super easy and quick to make, with a delightful fresh and tangy lime flavor. My tarts are baked in "brioche" molds or tartlet molds.

Ingredients
Shortcrust Pastry
Lime Cream
Instructions
Shortcrust Pastry
Crumble butter into flour and mix together
Add powdered sugar
Add egg and mix quickly
Chill the pastry for at least ½ hour
Roll out the pastry to fit 12 molds
Blind bake the bases for 5 min, then without blind baking for 10 min at 180°C conventional oven
Lime Cream
Grate the zest of 2 limes
Juice all 4 limes
Heat zest, juice, eggs, and sugar slowly in a saucepan until it thickens
Whisk the cream into the butter and chill
Fill the pre-baked bases with the cream and bake the tarts for 3-5 min
Top with lime zest and wood sorrel
