Lime Tarts

These small lime tarts are super easy and quick to make, with a delightful fresh and tangy lime flavor. My tarts are baked in "brioche" molds or tartlet molds.

Lime Tarts

Ingredients

  • Shortcrust Pastry
  • 200 g flour
  • 50 g powdered sugar
  • 100 g butter
  • 1 egg
  • Lime Cream
  • 4 limes
  • 2 eggs
  • 85 g sugar
  • 70 g butter

Instructions

  1. Shortcrust Pastry
  2. Crumble butter into flour and mix together
  3. Add powdered sugar
  4. Add egg and mix quickly
  5. Chill the pastry for at least ½ hour
  6. Roll out the pastry to fit 12 molds
  7. Blind bake the bases for 5 min, then without blind baking for 10 min at 180°C conventional oven
  8. Lime Cream
  9. Grate the zest of 2 limes
  10. Juice all 4 limes
  11. Heat zest, juice, eggs, and sugar slowly in a saucepan until it thickens
  12. Whisk the cream into the butter and chill
  13. Fill the pre-baked bases with the cream and bake the tarts for 3-5 min
  14. Top with lime zest and wood sorrel
