Hot Cross Buns

Soft, slightly sweet buns filled with warm spices and juicy raisins, adorned with the classic cross and a glossy glaze. Hot Cross Buns originate from England and are traditionally eaten on Good Friday during Easter. Perfect for the Easter table or as a cozy afternoon bun with butter.

Hot Cross Buns

Ingredients

  • Dough
  • 300 ml milk
  • 25 g yeast
  • 2 eggs
  • 75 g sugar
  • 650 g all-purpose flour
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • ½ tsp ground nutmeg
  • 1 tsp salt
  • 75 g butter
  • 100 g raisins
  • 1 organic orange
  • Dough for Cross
  • 70 g all-purpose flour
  • 60 g water
  • 15 g olive oil
  • Glaze
  • 50 ml water
  • 50 ml sugar

Instructions

  1. Dough
  2. Dissolve the yeast in warm milk and stir in the eggs
  3. Add sugar, flour, cinnamon, cardamom, nutmeg, and salt, and knead the dough until it comes together
  4. Add the butter in small pieces and continue kneading for 5 minutes until the dough is soft and elastic, then let it rise covered for 1 hour
  5. Turn the dough out onto a floured surface and knead in the raisins and orange zest
  6. Divide the dough into 12 pieces, shape them into buns, and place them close together on a baking sheet lined with parchment paper
  7. Let them rise covered for another 30 minutes
  8. Dough for Cross
  9. Mix flour, water, and oil together to form a thick paste
  10. Place the flour mixture in a piping bag with a small hole and pipe it as a cross on the buns
  11. Bake the buns at 200°C (fan) for 15 minutes
  12. Meanwhile, make the glaze

  14. Bring water and sugar to a boil in a saucepan until the sugar is dissolved
  15. As soon as the buns are taken out of the oven, brush them immediately with the sugar mixture
