Cut the potatoes into sticks and place them in a bowl with cold water for 30 minutes
Dry the potatoes well with a tea towel
Toss with oil, salt, and seasoning
Spread them on a baking sheet lined with parchment paper in a single layer
Bake for 25 - 30 minutes, turning halfway, until they are golden and crispy
