Dumplings
Dumplings, or gyoza, are a delicious Asian dish consisting of a filling embraced by a simply beautifully folded dough. You can vary the filling, for example, to make it purely vegetarian. The beautiful folding technique can be a bit challenging the first time, see the video for guidance.

Dough
Dissolve the salt in the hot water and knead in the flour until it becomes a uniform dough
Let the dough rest for 30 minutes
Filling
Mix the meat with chopped spring onions, garlic, grated ginger, and the sauces
Let the filling chill for 30 minutes
Dumplings
Roll the dough out thinly, either with a rolling pin or a pasta machine
Cut the dough into circles about 8 cm in diameter
Place a teaspoon of filling in the center of each circle, brush the top half of the circle with water and fold the dumplings by making small "curtains" over the dough (see video for guidance)
Then fry the dumplings in a hot pan with a little oil until they have a bit of color on the bottom
Pour 100 ml water into the pan and cover the pan with a lid, so they steam
Serve dumplings with, for example, soy sauce, goma dressing, toasted sesame seeds, and spring onions
