Cream Puffs with Strawberries
These elegant cream puffs combine a chewy base of baked marzipan with a light, sweet foam and a fresh strawberry in the center. Each cream puff is coated with crisp dark chocolate and garnished with freeze-dried strawberries for a beautiful and inviting appearance. A delicious and luxurious version of the classic cream puff.

Bases
Knead marzipan with egg whites and sugar into a uniform mass
Place the mass in a piping bag with a round nozzle and pipe 10 circles onto a baking sheet lined with parchment paper
Bake the bases in a conventional oven at 190°C for 8 - 10 minutes
Let the bases cool completely
Foam
Boil water, sugar, and glucose syrup until it reaches a temperature of about 110°C
Whisk egg whites and sugar at full speed in a mixer
When the sugar mixture reaches about 118°C, slowly pour it into the egg whites while whisking
Whisk the foam for about 10 minutes until it is completely firm
Clean the strawberries and cut off the tops
Place a suitably sized strawberry on each base
Put the foam in a piping bag and pipe it around each strawberry to cover it
Let the cream puffs sit for at least one hour to dry
Melt 2/3 of the chocolate, remove from heat, and stir in the remaining 1/3
Place the cream puffs on a rack and pour the chocolate over them
Garnish with freeze-dried strawberries

These small lime tarts are super easy and quick to make, with a delightful fresh and tangy lime flavor. My tarts are baked in "brioche" molds or tartlet molds.
Financiers
Financiers is a traditional French cake where the main ingredient is almonds. Financiers use egg whites as a leavening agent. The small cakes have a characteristic shape like a small rectangle. I bought my molds at Kunst og Køkkentøj. Financiers are simple and delicious, and can be easily varied with, for example, berries or chocolate. If you have leftover egg whites from another baking session, they can be advantageously frozen in a sealed bag. Just thaw them before use.
