Financiers
Financiers is a traditional French cake where the main ingredient is almonds. Financiers use egg whites as a leavening agent. The small cakes have a characteristic shape like a small rectangle. If you have leftover egg whites from another baking session, they can be advantageously frozen in a sealed bag. Just thaw them before use.
