Chop the onion and garlic and sauté them in a large pan or wok with cumin, coriander, and curry powder. Peel the sweet potato, cut it into cubes, and add it to the pan. Add chopped tomatoes, coconut milk, and chickpeas and let it simmer for 20 minutes. Season with salt and serve with rice and optionally fresh cilantro.
