Chickpea Stew

A delicious and creamy chickpea stew with sweet potato, coconut milk, and plenty of flavor. The stew is packed with spices and is super easy to make. Serve it with rice and optionally fresh cilantro.

Ingredients

  • 1 onion
  • 3 cloves garlic
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp curry powder
  • 1 sweet potato
  • 1 can chopped tomatoes
  • 1 can coconut milk
  • 1 can chickpeas
  • 300 ml rice

Instructions

  1. Chop the onion and garlic and sauté them in a large pan or wok with cumin, coriander, and curry powder. Peel the sweet potato, cut it into cubes, and add it to the pan. Add chopped tomatoes, coconut milk, and chickpeas and let it simmer for 20 minutes. Season with salt and serve with rice and optionally fresh cilantro.
