Chia Pudding with Blueberries

A creamy and fresh chia pudding with sweet blueberries and a hint of lemon. Perfect as an easy breakfast that can be prepared the day before, or as a healthy snack when you need something quick and nutritious.

Chia Pudding with Blueberries

Ingredients

  • 300 ml milk
  • 100 ml chia seeds
  • 400 g skyr with forest berries
  • 200 g frozen blueberries
  • Finely grated zest of 1 organic lemon

Instructions

  1. Stir milk and chia seeds together in a bowl so the seeds are evenly distributed.
  2. Then add skyr and lemon zest, and mix everything well into a creamy consistency.
  3. Finally, fold in the frozen blueberries; you can optionally mash half of them lightly if you want more color and flavor in the pudding.
  4. Cover the bowl and refrigerate overnight, or at least 4 - 6 hours until the pudding is nice and thick.
  5. Stir the pudding before serving, and top with granola, fresh berries, or a little honey for extra sweetness.
