Stir milk and chia seeds together in a bowl so the seeds are evenly distributed.
Then add skyr and lemon zest, and mix everything well into a creamy consistency.
Finally, fold in the frozen blueberries; you can optionally mash half of them lightly if you want more color and flavor in the pudding.
Cover the bowl and refrigerate overnight, or at least 4 - 6 hours until the pudding is nice and thick.
Stir the pudding before serving, and top with granola, fresh berries, or a little honey for extra sweetness.
