Instructions
Slice the ciabatta bread
In a small bowl, mix olive oil, garlic, salt, and pepper together
Spread the mixture on each bread slice
Slice the mozzarella so there is enough to cover all the bread slices completely
Similarly, slice the tomatoes
Place the bread on the grill for about 10 minutes until the cheese begins to melt; alternatively, bake in a 175ºC convection oven for 10 minutes
Garnish the bread with fresh basil
