Cardamom Buns

Cardamom bun are my absolute favorite yeast dough pastry. Here you get the recipe for sticky cardamom twists with a good layer of filling. I roll them in a slightly different way, which makes them extra beautiful and properly baked through. You can see how in the video below. Let them rise for 3 hours or longer. This gives you a really smooth and delicious dough, and some large twists.

Cardamom Buns

Ingredients

  • Dough
  • 25 g yeast
  • 250 ml lukewarm milk
  • 1½ tsp cardamom pods
  • 50 g sugar
  • ½ tsp salt
  • 1 egg
  • 500 g all-purpose flour
  • 80 g butter
  • Filling
  • 150 g soft butter
  • 50 g sugar
  • 50 g brown sugar
  • 3 tsp cardamom pods
  • Sugar Syrup
  • 50 ml boiled water
  • 50 g sugar
  • Cardamom Sugar
  • 2 tbsp sugar
  • 2 tsp cardamom pods

Instructions

  1. Dough
  2. Dissolve the yeast in the lukewarm milk
  3. Crush the cardamom pods and add cardamom, sugar, salt, and egg
  4. Add the remaining ingredients and knead the dough thoroughly until it comes together
  5. Let the dough rise covered for at least 1 hour, preferably longer
  6. Filling
  7. Crush the cardamom pods with a mortar and mix it with butter, sugar, and brown sugar
  8. Sugar Syrup
  9. Boil the water and dissolve the sugar
  10. Cardamom Sugar
  11. Crush the cardamom pods with a mortar and mix it with the sugar
  12. Buns
  13. Cut the dough into 10 equal pieces and roll them out into rectangles
  14. Spread about 2 tsp of filling on each rectangle and roll it up lengthwise into a log, like rolling a Swiss roll
  15. Make a cut all the way up the middle of the log, leaving the last 2 cm uncut
  16. Twist the two new logs all the way down
  17. Roll the twisted log in and seal it at the bottom
  18. Place the twists on a baking sheet and let them rise for 1 hour, preferably longer
  19. Brush the twists with egg and bake them for 10-15 minutes at 200°C fan
  20. Brush them with the sugar syrup and sprinkle with cardamom sugar
