Cacio e Pepe

Cacio e Pepe is a classic Roman pasta dish with only a few ingredients: pasta, Pecorino Romano, black pepper, and pasta water. Many modern recipes add butter, but in the original version, it's the cheese and pasta water that create the creamy sauce. A simple, authentic, and incredibly flavorful dish where the few ingredients truly get to shine.

  • 400 g spaghetti
  • 10 g black peppercorns
  • 150 g Pecorino Romano

Instructions

  1. Cook the pasta 3 minutes shorter than indicated on the package. Remember to save the pasta water.
  2. Crush the peppercorns in a mortar and toast them in a hot, dry pan. Remember to stir.
  3. Add 100 ml of pasta water to the pan and stir.
  4. Grate Pecorino Romano into a bowl, add 100 ml of pasta water, and whisk it into a creamy mixture.
  5. Toss the cooked pasta with a little extra pasta water in the pan.
  6. Add the cheese mixture and an additional 100 ml of pasta water and stir well.
