Dissolve the yeast in the lukewarm milk
Add sugar, egg, and salt, and stir together
Gradually add the flour until you have a soft, sticky dough
Knead the dough for 8–10 minutes (preferably in a stand mixer) until it becomes elastic and smooth
Add the butter a little at a time while continuing to knead; the dough should be shiny and just barely release from the bowl
Cover the bowl with a tea towel and let the dough rise for 1 - 1½ hours at room temperature
Divide the dough and shape into round buns
Place them on baking paper and let them rise again for 45 - 60 minutes, covered
Brush the buns with egg yolks
Bake at 200°C (conventional oven) for 12–14 minutes until beautifully golden
