Brioche Burger Buns

Soft, airy brioche buns with butter and eggs, providing a slightly sweet and buttery flavor. Perfect for gourmet burgers and still delicious the next day.

Brioche Burger Buns

Ingredients

  • 150 ml milk
  • 15 g yeast
  • 1 tbsp sugar
  • 1 egg
  • ½ tsp salt
  • 300 g all-purpose flour
  • 50 g butter

Instructions

  1. Dissolve the yeast in the lukewarm milk
  2. Add sugar, egg, and salt, and stir together
  3. Gradually add the flour until you have a soft, sticky dough
  4. Knead the dough for 8–10 minutes (preferably in a stand mixer) until it becomes elastic and smooth
  5. Add the butter a little at a time while continuing to knead; the dough should be shiny and just barely release from the bowl
  6. Cover the bowl with a tea towel and let the dough rise for 1 - 1½ hours at room temperature
  7. Divide the dough and shape into round buns
  8. Place them on baking paper and let them rise again for 45 - 60 minutes, covered
  9. Brush the buns with egg yolks
  10. Bake at 200°C (conventional oven) for 12–14 minutes until beautifully golden
