Blackberry Layer Cake

This beautiful blackberry layer cake combines a fluffy almond base, a rich chocolate base, and a fresh blackberry mousse, topped with creamy blackberry foam and a delicious blackberry ganache. Perfect for summer parties or a special occasion where you want to impress with a flavorful and elegant layer cake.

Blackberry Layer Cake

Ingredients

  • Almond Base
  • 3 eggs
  • 35 g sugar
  • ½ tsp baking powder
  • 50 g flour
  • 50 g finely chopped almonds
  • Chocolate Base
  • 250 g sugar
  • 150 g butter
  • 175 g flour
  • 1 tsp baking powder
  • 1 tsp vanilla sugar
  • 4 tbsp cocoa powder
  • 2 eggs
  • 150 ml milk
  • Blackberry Mousse
  • 3 sheets gelatin
  • 300 g blackberries
  • 100 g sugar
  • 1 tsp vanilla sugar
  • 1 organic lemon
  • 200 ml cream
  • 100 g Greek yogurt
  • Blackberry Ganache
  • 200 ml blackberries
  • 200 g milk chocolate
  • 40 g glucose syrup
  • 1 lime
  • Blackberry Foam
  • 150 g blackberries
  • 1½ tbsp sugar
  • 250 ml cream

Instructions

  1. Almond Base
  2. Separate the egg yolks and whites, and whisk the yolks with sugar until fluffy
  3. Gently mix baking powder, flour, and chopped almonds into the egg mixture
  4. Whisk the egg whites until stiff and fold them into the batter
  5. Pour the batter into a Ø 21 cm springform lined with baking paper
  6. Bake the almond base at 190ºC conventional oven for 20 min
  7. Chocolate Base
  8. Whisk eggs and sugar until fluffy, and add melted butter
  9. Whisk all the dry ingredients into the egg mixture
  10. Add milk gradually
  11. Pour the batter into a Ø 21 cm springform lined with baking paper
  12. Bake the base at 200ºC conventional oven for 35 - 40 min
  13. Let the base cool and split it into two parts
  14. Blackberry Mousse
  15. Soak the gelatin in water for 10 min
  16. Bring blackberries to a boil in a saucepan with sugar, vanilla sugar, and the zest and juice of the lemon
  17. Let the blackberry mixture simmer for 10 min
  18. Squeeze the water from the gelatin and stir it into the saucepan
  19. Let the blackberry mixture cool
  20. Whisk the cream until stiff and fold it with Greek yogurt
  21. Fold the blackberry mixture gradually into the whipped cream
  22. Place the almond base in a cake ring lined with plastic, and pour the blackberry mousse over it
  23. Blackberry Ganache
  24. Melt the chocolate over a water bath
  25. Bring blackberries, glucose syrup, and lime juice to a boil in a saucepan
  26. Pour the blackberry syrup into the chocolate and stir until it becomes a uniform mass
  27. Place a chocolate base on top of the blackberry mousse and spread the blackberry ganache over it
  28. Place the last chocolate base on top of the blackberry ganache and let the layer cake cool for at least 3 hours, or overnight
  29. Blackberry Foam
  30. Bring berries and sugar to a boil in a saucepan
  31. Let the mixture cool
  32. Whisk the cream until stiff and slowly fold the berry mixture into the whipped cream
  33. Decoration
  34. Spread the berry foam over the cold layer cake and decorate with blackberries
