Blackberry Layer Cake

Ingredients
Almond Base
Chocolate Base

Blackberry Ganache
Blackberry Foam
Instructions
Almond Base
Separate the egg yolks and whites, and whisk the yolks with sugar until fluffy
Gently mix baking powder, flour, and chopped almonds into the egg mixture
Whisk the egg whites until stiff and fold them into the batter
Pour the batter into a Ø 21 cm springform lined with baking paper
Bake the almond base at 190ºC conventional oven for 20 min
Chocolate Base
Whisk eggs and sugar until fluffy, and add melted butter
Whisk all the dry ingredients into the egg mixture
Add milk gradually
Pour the batter into a Ø 21 cm springform lined with baking paper
Bake the base at 200ºC conventional oven for 35 - 40 min
Let the base cool and split it into two parts
Blackberry Mousse
Soak the gelatin in water for 10 min
Bring blackberries to a boil in a saucepan with sugar, vanilla sugar, and the zest and juice of the lemon
Let the blackberry mixture simmer for 10 min
Squeeze the water from the gelatin and stir it into the saucepan
Let the blackberry mixture cool
Whisk the cream until stiff and fold it with Greek yogurt
Fold the blackberry mixture gradually into the whipped cream
Place the almond base in a cake ring lined with plastic, and pour the blackberry mousse over it
Blackberry Ganache
Melt the chocolate over a water bath
Bring blackberries, glucose syrup, and lime juice to a boil in a saucepan
Pour the blackberry syrup into the chocolate and stir until it becomes a uniform mass
Place a chocolate base on top of the blackberry mousse and spread the blackberry ganache over it
Place the last chocolate base on top of the blackberry ganache and let the layer cake cool for at least 3 hours, or overnight
Blackberry Foam
Bring berries and sugar to a boil in a saucepan
Let the mixture cool
Whisk the cream until stiff and slowly fold the berry mixture into the whipped cream
Decoration
Spread the berry foam over the cold layer cake and decorate with blackberries
