Meat Mixture
Grate the ginger and finely chop the spring onions
Mix the spring onions, soy sauce, egg, ginger, and breadcrumbs with the ground chicken
Stir or knead the mixture thoroughly until it becomes a firm meat mixture, and let it rest for about 30 minutes
Glaze
Grate the ginger and chop the garlic
Sauté the ginger and garlic together
Add soy sauce and lime juice
Add honey and let it melt
Let the glaze simmer for about 10 minutes until it reaches a thick syrup consistency
Sauté broccoli, mushrooms, and spring onions in a pan until they soften slightly in a bit of oil
Remove the vegetables from the pan and set aside
Fry the meatballs in the pan with oil
When the meatballs are done, pour the glaze onto the hot pan
Let it simmer for 1-2 minutes until it coats all the meatballs like a syrup
Cook the noodles and mix them with the vegetables
Sprinkle the meatballs with sesame seeds and optionally some finely chopped spring onions and serve
