Whisk eggs and sugar until light and fluffy.
Melt the butter and whisk it in.
Fold in flour, vanilla sugar, and baking powder, then pour the mixture into a springform pan.
Chop 1 apple into cubes and mix it into the batter.
Slice the remaining two apples and arrange them on top of the cake.
Mix sugar and cinnamon and sprinkle over the cake.
Bake at 180°C (conventional oven) for 35 - 40 minutes. The cake should be slightly gooey inside.
Serve with crème fraîche or whipped cream.
